The CATRA V-100 enables the user to adjust the grind angle and hollow grind. This is ideally suited for high-volume knife sharpening businesses where hollow grinding lets you get the maximum life from the knife, while being able to adjust the grind angle for specific applications.
A selection of wheel dimensions are available: 30° (adjustable between 0-30°), 40° (adjustable between 0-40°), 50° (adjustable between 0-50°) and 60° Default (adjustable between 0-60°). This unit can also sharpen to inclusive angles of 0° to as large as 70° (with 70° wheels – Contact us). The V-100’s variability coupled with our CBN wheels make it one of the most powerful sharpeners in the commercial sector.
Wheels are also available in a range of CBN grits, including 76, 126 (Default), 151 and 181. The in case of CBN grit sizes, the smaller the number the finer the grade and surface finish of the knife.

CBN 151 – Coarse High-speed sharpening and non-food industrial use
Typically, chef knives and those used in the commercial kitchens will use a 30° tip angle for optimum slicing efficiency. However, blades that require a chopping action use 40° and above, as this is more appropriate for improving edge durability.
Using a hand-held goniometer, such as our Hobbi-Goniometer or Portable Laser Goniometer, will ensure you have the correct grind angle set.
We offer a recoating service, as the grinding wheels for the I-100 can be recoated several times over. The normal turnaround time for a pair of wheels to be recoated is 3 weeks from receipt at CATRA.
